Thai Green Coconut Smoothie

Method:

Place all of the ingredients together in a blender and blend until smooth. Lasts up to 2 days in the fridge and freezes well. Serves 4.

Hint:

Add ice towards the end for a bit of crunch.

Ingredients:

  • 1 C coconut milk
  • ΒΌ C cashews
  • 1 medium pineapple, frozen
  • 1 C kale leaves, stems removed
  • 2 bananas, frozen
  • 1 T coconut oil, melted
  • 2 dates, pitted
  • 1 T coriander leaves, fresh
  • 1 C ice
  • Pinch salt
